Method prevents Anisakis infection and risk of allergy

Researchers at the CSIC's Instituto del Frio and Hospital Carlos III, in Madrid, have developed a method for detecting Anisakis allergens in fish.

The method detects Anisakis allergens in fish.

The system, whose patent is pending, is available at the laboratory stage and will allow to obtain detection kits. Its advantages are the high sensitivity and speed of use, as the stage of purification of the sample is no needed. The system not only detects fish infestation by live larvae but also parasite fragments in fish muscle, namely the antigen Ani s 4.
